Pomegranate muffins



  • 150 gr. Pomegranate grains
    1 tablespoon lemon juice
  • 250 gr. Of flour
    2 teaspoons baking powder
  • 1/2 teaspoon baking soda – 1 egg
  • 125 gr. of sugar
  • 1 vanilla sugar packet
  • 80 ml. sunflower oil
  • 2 natural yoghurts
  • Dark Chocolate for coverage
  • Pomegranate grains

Step by Step

Preheat oven to 180 ° C and place the rack at the bottom, grease a muffin pan. Thresh the pomegranate and reserve in a bowl with a lid. Mix the flour with the baking powder and baking soda in a large bowl.
In another bowl, beat the egg and gradually add sugar, vanilla sugar, oil, yogurt, lemon juice and 150 gr. pomegranate. Incorporate the flour mixture with a silicone spatula until it is integrated.

Fill the 12 holes of the tray with dough and bake for 25-30 minutes, remove the pan from the oven and let stand for five minutes, unmould and cool on a rack. Once cold we can eat them or freeze them in zip bags.

Melt the dark chocolate in the microwave on medium power. Pour a tablespoon over each muffin letting fall unevenly. Place pomegranate grains on hot chocolate, refrigerate a few minutes for the chocolate to harden and for the grains to stick.
